A comfort food recipe

Todays thought for me is about comfort food. I remember these cookies have always been in our repertoire but for the last couple of years where have they been? My tastes and cooking methods may have grown more complicated but these make you feel like a child again. I even remember that these used to be served at the school cafeteria back in the day when there were a bunch of older ladies actually COOKING the food. God bless them all-my children hear so much about me and my love of the "Cafeteria Ladies of Fort Worth". Maybe I should write about them. Meanwhile, Enjoy!!!


No Bake Chocolate Oatmeal Cookies
* 1/2 cup butter or margarine
* 2 cups sugar
* 1/2 cup milk
* 4 tablespoons cocoa
* 1/2 cup creamy peanut butter (or chunky)
* 3-3 1/2 cups dry quick-cooking oats
* 2 teaspoons vanilla

Directions

1.Add the first four ingredients into a 4-quart sauce pan.
2.Bring to a rolling boil and hold for 1 minute.
3.Remove from heat.
4.Stir in the next 3 ingredients and drop by tablespoons onto wax paper.
5.Let cool until set.

Try not to eat more than 5 in one session!!!

Today I deviated and I subtracted 1/2 cup sugar and added 1/2 cup cornflakes.

Bob's favorite thing! I've got to where I don't want anything to do with peanut butter lately, though. :-( We have come up with a variation or two on the original - I reduce the sugar to 1 1/3 c, use heaping amounts of cocoa, and the big difference - old fashioned oats. Bob taught me that right away. It makes for a chewy rather than a crispy/crumbly cookie. The other guilty little secret is we eat it hot, from a bowl, and only make cookies with the leftovers. :-) One time I ran out of old fashioned oats, and used half quick oats. Taryn thought it would be okay, but Bob took one bite and said, "Did you use minute rice???" We all got a big laugh out of that.

oh, I added cornflakes for an extra crunch and subtracted 1/2 cup sugar. And yes, I ate 4 of them before they had a chance to set.My stomach hurts!
